The recipe.
Scaling adjusts quantities only. Prepare shaken drinks in individual portions.
Let’s make a good drink.
Chill six serving glasses and fill a pitcher one third full with crushed ice.
Add the measured dark rum, pineapple juice, orange juice, grenadine and bitters to the pitcher.
Churn the mixture vigorously with a swizzle stick or spoon until it is cold and develops a frothy surface.
Strain and divide evenly among the six chilled glasses; Collins glasses are the directory’s serving adaptation.
A thoughtful finish
- These measures make six servings; do not pour the whole pitcher as one drink.
- Use the company’s expressly permitted all-Black-Seal option to retain the directory’s dark-rum base.
- Strain and divide immediately so the crushed ice does not keep diluting the whole pitcher.
Common mistakes
- Treating the full batch as one serving misrepresents its strength and yield.
- Adding both grenadine and falernum combines two mutually alternative sweeteners.
- Churning above the surface can splash liquid out of the pitcher.
A few good questions.
How many servings does this Rum Swizzle make?
Six servings, as stated by Goslings; the recorded measures are for the complete pitcher.
Can I use both Black Seal and Gold Rum?
Yes. The original company list uses 4 oz of each; it also permits the all-Black-Seal option selected here.
Does this version contain lemon juice?
No. It uses pineapple and orange juices with the selected grenadine sweetener.
Why use a Collins glass?
The fixed directory glass is Collins; Goslings specifies a martini glass, so the serving-glass difference is labeled.
Variations
- Original two-rum option — Use 4 oz Black Seal and 4 oz Goslings Gold Rum instead of the selected 8 oz Black Seal, keeping the six-serving batch.
- Published falernum alternative — Replace the batch’s ¾ oz grenadine with 2 oz Bermuda Falernum, as specified by Goslings; do not add both.
