Seelbach is made with bourbon, orange liqueur, aromatic bitters and Champagne in a sparkling drink, served cold.

White peach purée and Prosecco. Two ingredients, no substitutions, and a very short season in which it is genuinely worth making.

Equal parts orange juice and sparkling wine. There is nowhere to hide, which is why the juice matters more than the wine.

Gin, lemon, sugar and Champagne — named after a field gun, and it hits about as hard.
