Built to the standard modern spec; not yet tested in our kitchen. How we test.
The recipe.
Scaling adjusts quantities only. Prepare shaken drinks in individual portions.
Let’s make a good drink.
Chill a Champagne flute and prepare the garnish before mixing.
Muddle the measured pineapple cube in the shaker, then add the still ingredients; keep Champagne out of the tin.
Add ice, seal the shaker and shake until the tin feels thoroughly cold.
Fine strain into the prepared Champagne flute.
Add the reserved measured sparkling ingredient gently; if the source specifies a top-up, fill to taste rather than inventing a fixed volume.
Add a small pineapple garnish to the rim or a cocktail pick. Add a drained cocktail cherry on a pick.
A thoughtful finish
- Muddle the pineapple cube before adding the other still ingredients.
- The selected syrup is rich, two parts sugar to one part water; use that concentration for the listed measure.
- Chill the serving glass as well as the mixture so the first sip stays cold.
Common mistakes
- Putting Champagne in the shaker turns the finishing bubbles into foam and wasted wine.
- Using a thin 1:1 syrup at the same volume supplies less sugar and changes the sour balance.
- A warm serving glass quickly undoes the chilling achieved during mixing.
A few good questions.
What is in a Prince of Wales?
Prince of Wales is made with rye whiskey, pineapple, maraschino and bitters finished with Champagne.
Can I scale a Prince of Wales for more servings?
Multiply every measured ingredient by the same serving count. Prepare the measured still ingredients ahead if useful, but chill, shake or stir each serving as directed; add any carbonated finish at service.
What kind of simple syrup should I use?
Use rich 2:1 sugar syrup for this selected build. A 1:1 syrup is less concentrated and should not be silently substituted at the same measure.
What glass should I use for a Prince of Wales?
Use the assigned Champagne flute for this directory serving. Where that differs from the source’s presentation, the version note labels the serving adaptation.
Variations
- Another dry sparkling wine — Editorial bottle variation: use a different dry sparkling wine for the same finishing measure or top-up instruction; flavor changes, and it should not be labeled Champagne unless it is Champagne.
- Alternate citrus garnish — Editorial presentation variation: use a different fresh citrus peel or slice for aroma without changing the measured liquids; garnish quantity is not an added juice measure.
