Pisco Punch
This Pisco Punch shakes pisco, pineapple gum syrup and fresh lemon into a bright, pineapple-flavored sour served up with a lemon wheel.
Built to the standard modern spec; not yet tested in our kitchen. How we test.
The recipe.
Scaling adjusts quantities only. Prepare shaken drinks in individual portions.
Let’s make a good drink.
Chill a coupe and cut a lemon wheel.
Measure the pisco, pineapple gum syrup and lemon juice into a shaker.
Add ice and shake until the mixture is cold.
Strain into the coupe and finish with the lemon wheel.
A thoughtful finish
- Use the specified pineapple syrup; pineapple juice is not an equivalent sweetener.
- Measure the lemon juice after removing seeds.
- Keep the garnish thin so it sits neatly on the coupe.
Common mistakes
- Replacing pineapple syrup with juice removes much of the intended sweetness and body.
- Adding ordinary simple syrup as well as pineapple syrup makes an unlabeled sweeter build.
- Using a heavily flavored spirit in place of pisco hides the intended base.
A few good questions.
Is this Pisco Punch a large batch recipe?
No. This record is a single-serving published version, despite the word punch.
Can I replace pineapple syrup with pineapple juice?
Not as an exact substitution; the syrup provides concentrated sweetness and body.
Does this version use lime?
No. It uses fresh lemon juice.
Can I prepare several servings?
Yes. Scale the measured liquids together, chill them and shake with ice in manageable portions at serving time.
Variations
- Smaller serving — serving adaptation — Scale the three liquids together and use a smaller chilled glass.
- Without lemon wheel — garnish adaptation — Omit the wheel while retaining the measured sour formula.
